Yixian is located in the southwest of Anhui province, just between the Yellow Mountain and Keemun. The remoteness of this area, combined with the high mountains preserved this area as a suitable area for natural tea. The tea farm is hidden inside the mountains between the old forests and getting there is a one and a half hours walk or half an hour by car over very steep and sandy roads. This is what we like; a tea farm that is very difficult to reach is almost by definition a good tea farm - just because it is not suitable for making quick money by using pesticides and chemical fertilizer.
The annual rainfall in this area is around 1,760mm, the average temperature 16.4°C and the pH-value of the soil between 5.0 and 6.5. All high mountain tops are characterized by stones, with yellow soil just below this top.
The Li family from Yixian, is a tea family for many generations already where knowledge is passed down from father to son. The youngest Li is now in his twenties and learning from his father how to make good tea. Besides Tea Master Li, there are also the owners of the this tea farm and the tea factory that processes the tea. Nowadays most of the teas are processed with a production line but, they will focus on making a small batch of hand-processed tea every year. Their speciality is the Shimo tea, they are the only one who have the right to processes and sell this remarkable black tea.
A tea with a thousand year history, only made in Yixian, Anhui.
Shimo Black can be recognized by the following features: Its unique shape, the thick and bright tea liquid and a taste between black tea and oolong tea, so fragrant. We do not think Anhui offers a black tea better than this one.
Yishan Shimo Tea is picked between Qingming and Guyu, with one bud and two leaves. There are more than ten processing steps: Withering, Fixing, Rolling, First baking, Frying, Filter, Resting, Second baking and sometimes a third and fourth baking step. All depending on the weather and the sate of the picked fresh leaves.
Spring Tea: Only one harvest, between Qingming and Gu Yu
Shape: Tea leaf is rolled into a (very small) ball shape.
Tea soup: Clean, Bright, and orange red.
Fragrance: The changes in the fragrance are magic: In the beginning, the tea is sweet then changes into a floral fragrance (garland-flower fragrance), and then shows the unique fragrance of the tea garden (green). Finally, the fragrance returns to light sweet and floral.
Aroma: Smooth and sweet, long lasting
We feel most honored to have found this lost Yishan Shimo Tea, now made available for you.
This tea is best enjoyed with a gaiwan and very small tea cups, the kungfu. Every step of this process will release different flavors and fragrances, making it a truly wonderful experience. And by using white porcelain, the bright, almost orange color, will reach its suitable stage.
Always steep black tea at around 90°C and use 3 - 5 grams per steep. If you don't have time, but really want to drink this tea, then put 3 grams Shimo Black into a big glass and fill with water at around 90°C, or 194 degrees Fahrenheit. Let it cool down for about 2 minutes, then you will taste a black tea that you have never tried before and, makes it difficult to stop drinking from. This is why we suggest to let the tea cool down before you start drinking.
