Houkeng is a village, located at the south of Anhui's Taiping lake, around 30 kilometers away from the Huangshan scenic area. This area is famous for one of China's most famous green teas: the Taiping Houkui, also known as the Monkey Chief. Famous doesn't mean that a tea is good, and this area has, over the years, gotten more and more commercialized. However, through this change, one man stood tall. He never gave up growing his tea in a completely natural way. Our hero, Tea Master Ye. The original tea cultivar for Houkui tea is the Shida Cultivar, which can still be found in Master Ye's tea garden. The soil is a combination of yellow/red soil, depending on the altitude with annual rainfall around 1300mm and an average temperature of 15°. The pH-value of the soil is 4.8 to 5.5. The tea garden is surrounded by old broadleaf forest and bamboo. Through the centre of the tea garden runs a small stream and down the mountain is an outskirt of the Taiping lake. This combination of circumstances are perfect for growing natural tea. There is no road to this tea area, the only possible way to get there is over the water, leaving the area in peace almost all year round.
Tea Master Ye processes every single batch of around 100 grams himself. His neighbors help with shaping the leaves in order to get the unique elongated Taiping Houkui shape. Most of the Taping Houkui teas are processed with a machine, but Master Ye will never do this - only by hand. The manufacturing process is: plucking - withering - fixing - shaping - baking (3 times) - packing
Plucking time: Between Qingming Festival and Guyu with harvest only on a sunny day and in the morning.
Plucking standard: One bud with two leaves
Dry leaf appearance: Long shape with dark and green color
Fragrance: Orchid fragrance and fried beans fragrance
Taste: Very smooth, sweet and fills your mouth with a full flower fragrance.
Tea soup: The bright yellow tea soup with obvious small white hair of tea leaves.
This tea is so good that you sometimes dream about it and once you have your first sip, you can't stop. Both steeping methods (the Kungfu and Western) are good, but Master Ye himself would always use a glass for the best taste. Natural, handmade tea won't get bitter, just be careful that you don't use too many leaves per glass.
Don't use boiling hot water, the temperature should be around 80 degrees Celsius, 176 Fahrenheit, or wait for about 5 minutes after you boiled the water.
